Wish: expose unused pins (+ SPI)

It would be good to add unused pins on the hat,
and eventually reassign used pins,
ie: button could use plain GPIO pin instead of SPI0 pin.

Hi @rzr, thank you for the valuable feedback. I will consider your proposal either for another HAT or new version of Flex. Do you have any particular SPI devices that you would like to attach?
