Bump PyYAML file to 6.0.1 #1

A bunch of python versions have problems with the pyyaml==5.4.1 file: yaml/pyyaml#724

The repo continues to work completely fine with pyyaml==6.0.1. To avoid breaking dependent packages (in my case MULE), it is beneficial to update this library

Thanks for the nudge. This was previously fixed in a commit for the 1.0.4 release:

I've fast tracked the release to fix this issue, which is now available on pypi. I've also released a new version of the sxmp-mule package: 1.1.1, with updated scooch and click dependencies.

This should resolve your issue, so I'll close this PR. Feel free to open a git issue if you have any further problems.
