Additional info on how to track the progress of a project in GH

I <3 this repo, it's one of the repos I share the most with clients.

We're doing a great job at explaining what gh is and how to use it, but I think we may need some additional info on how to use it throughout a project - letting people understand how to track progress which we mention a lot in the introduction.
