[Lens] Thresholds: consider to change default operation to 95% Percentile rather than Median on field drop

Describe the feature:

Consider to change default operation for dropped field to 95th Percentile from Median?

Note:

I recall a discussion with @ghudgins about this and, while the 95th percentile was a good start for some use cases, the median was a good start in most cases. I cannot find a recording of it, so maybe I'll wait for @ghudgins' feedback here.

we originally requested the percentile as the default but there was a reason we couldn't do it. Discussion linked here
