[Maps] extended stats should include where query and source query

Extended stats are used to fetch range bands and categories from the entire index rather then just being calculated from the current feature set. Extended stats provides range band stability as users pan, zoom, and filter maps. In the current implementation, all filters and queries are excluded from extended stats request.

Observability data puts all documents into a single index. It is common to apply a layer level filter to isolate document types. For these use cases, extended stats needs to include these layer level filters to provide meaningful range bands. Filters and queries where excluded from extended stats requests to provide stability. This change will not impact the original intent since layer level filters are not changed outside of map editing.
