Feature request: Better Alignment with Expo Schemes

Is your feature request related to a problem?

We have a few scripts that need to be run when building the app, which is a bit more complex than is probably needed

We should better align with https://docs.expo.dev/build-reference/variants/

Would like to remove the usage in:
scripts/build/android/production.js (preview as well)
scripts/build/ios/production.js (preview as well)
& scripts/build/eas.js
