fix(misc): use generated directory path as cwd rather than attempting to rederive it

Current Behavior

• When running npx create-nx-workspace my_workspace, we create the folder my_workspace, but attempt to run commands inside my-workspace.

Expected Behavior

• Name segments with numerals are stripped
• Commands from within create-nx-workspace are executed within the actual directory we create
