In our doc, we refer to #vscode-gitops channel

This channel is gone, not coming back (there is no way to convert a private channel to a public channel in our free slack for users)

Let's update the "Welcome to GitOps" to point people at #weave-gitops, which is active and we can monitor

The Community and Support still reads:

...which is incorrect, there is only #weave-gitops channel there. We should direct folks to the channel that exists, or create a new one, but I think there is an obstacle on our free slack since a private channel once existed with that name.

Maybe we can rename it out of the way and create another one.
