Fully working OpenTelemetry DEMO with single Beyla instance

Ensure we can capture everything that's running in the OpenTelemetry DEMO without any working instrumentation with a single Beyla instance.

Main goal, get metrics working (including span metrics and service graph metrics)
Stretch goal, make distributed traces working. Since the DEMO is single node, black box propagation should work, but we need to extend it to work with gRPC.
